The smart thing to do is only hire as many as you need to cover your current workload. On the other hand, if both have the potential to bring over some of their current clients, there may be an opportunity to expand your business....

Hire both, and delegate more of your work to them. Use half of your newly found free time to find more business, and the other half to just kinda screw off.
